I am not a huge breakfast person during the week, I could do with a vega shake and be good, but I have recently tried out some new things that have become my favourites for mornings. Don’t get me wrong I love my Saturday mornings filled with hearty omlets, pancakes, fruit etc. etc, but during the week I need something quick to get my day started.
I’ve been mixing chia and flax seeds in my smoothies, salads etc. for years, but had not ever tried making a pudding with them! This recipe is super simple and fulfills me — perfect for a work day, or a side to your big, hearty weekend breakfast platters. So here’s the deal: mix chia seeds with your choice of milk (I love almond or soy), and drizzle some organic raw blue agave syrup in a bowl. Let your mixture sit in the fridge for 10-15 minutes, so the chia seeds puff up (they still retain a good crunch) and become a pudding-like texture. You would not believe how delicious this simple recipe tastes and it is jam packed with amazing superfoods. I love to garnish and mix in berries for taste. Have you ever tried "Holy Crap" cereal (pardon the name but it's kinda cute)? It's delicious and only needs 5 minutes on the countertop. It contains organic chia, organic buckwheat and organic hulled hemp hearts, organic cranberries, organic raisins, organic apple bits and organic cinnamon. It's a bit pricey but a little goes a long way.

I think I will stick to putting my chia seed in my glass of water because this pudding didn't work for me.
