With Fall in full swing, I’ve been inspired to make more use out of my GE Appliances range to bake more seasonal treats! I love the pull out tray inside so it’s easy to pop things in and out while baking…
My soft pumpkin spice chocolate chip cookies have been my go-to recipe for the past 5 years – dare I say before pumpkin spice was even the cool thing!? Nonetheless, I still love making them.
Ingredients: Soft Pumpkin Spice Chocolate Chip Cookies
1 cup pumpkin puree
1 cup granulated sugar (brown sugar is the best for this)
½ cup oil (canola or vegetable)
1 teaspoon vanilla
1 large egg
2 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
½ teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 cup semi-sweet chocolate chips (I love dark chocolate chips)
Preheat oven to 375 degrees. Line cookie sheets with parchment paper sheets (I love unbleached ones from Whole Foods).
In a bowl, combine pumpkin, sugar, oil, vanilla and egg. Mix until well combined.
In a separate bowl, stir together the flour, baking powder, cinnamon and salt. In a small bowl, dissolve the baking soda with the milk. Add both the dry flour mixture and the wet baking soda mixture to the pumpkin mixture. Mix well. Add in your chocolate chips!
The more chocolate chips the better!
Bake for 10 to 12 minutes and allow to cool…

While baking, I also love making this stovetop potpourri to make our place smell extra fall (as if all of my pumpkin candles weren’t enough). All you need are a few ingredients and you keep adding water to it every few hours. I’m not worried about any spillage because our GE stovetop has a special glass that prevents any liquids or spills from going over. If you’re a little messy like me, this is so helpful!
Fall Stovetop Potpourri Recipe:
Add cinnamon sticks, orange slices, apple slices and cloves to boiling water. Reduce heat and let it simmer on the stovetop, continuously adding water throughout the day. Enjoy the natural scent!

I like the idea of baking but it’s so precise compared to cooking and plus I don’t have a sweet tooth lmao. Even though my boyfriend has a major sweet tooth and is obsessed with chocolate and peanut butter, I feel like baking produces way too many baked goods to keep up with.

Hi! I’ve just tried the recipe and the cookies are delicious! My husband and kids approve! One question though: my cookies are very soft, the texture is much more like a muffin than a cookie. Is it normal? And if not, do you have a suggestion to have something more crunchy? Thanks a lot for sharing your recipe!
